Brown Rice Salad

INGREDIENTS:

3 cups cooked brown rice

1 apple, diced
-
1 red bell pepper, chopped
-
2 celery stalks, chopped
-
½ cup walnuts, chopped
-
3 tablespoons parsley, chopped
-
¼ cup coconut vinegar
-
3 tablespoons coconut oil
-
sea salt and black pepper to taste
DIRECTIONS:

In a bowl, combine cooked rice with all ingredients. Mix lightly and serve.
