Fruity Corn Waffles

INGREDIENTS:

1 1/2 cups organic corn flour
1 cup all-purpose gluten-free flour (We use Bob’s Redmill)
2 Tablespoons Ener-G Egg Replacer
1 Tablespoon baking powder
2 Tablespoons ground flax seeds
2 Tablespoon apple cider vinegar
1/2 cup raisins
1 organic apple
2 1/2 cups water (separated)

DIRECTIONS:

  1. Grease and preheat a waffle iron.

  2. In a small bowl beat the flax seeds in 1/2 cup water. Beat in Egg Replacer and vinegar.

  3. In a large bowl add the flours and baking powder.

  4. In a small bowl beat the flaxseeds with 1/2 cup water. Add in the vinegar.

  5. Core and chop the apple into small, 1/4″ pieces. (Peel apple first if not organic)

  6. Pour the flax seed mixture and 1 cup of water into the large bowl with the flours. Mix well. Add in the last cup of water to make a thick batter. Stir in the apples and raisins.​

OPTIONAL: Batter may be blended before cooking if you prefer. We like to leave it with the chunky bits of fruit in it.

Let set for 5-10 minutes before pouring batter in the waffle iron.

 

Cook for about 15 minutes or until waffles are browned and crispy on the outside
