The Dark Side of Kale
You may already know that Kale is KING when it comes to nutritious superfoods and I absolutely love it…
It takes center stage when it comes to dark green leafy vegetables, smoothies, salads, etc.
But, did you know that there is a DARK side to kale?
Stop, no way, do tell..
Number 3 on the Environmental Working Group (EWG) Dirty Dozen
In the last few years kale has fallen from its throne and now takes the #3 spot (behind strawberry and spinach) on the “Dirty Dozen”, as one of the most herbicide/pesticide-contaminated vegetables in the United States, according to the U.S. EWG that rates produce for their herbicide/pesticide content.
But there is hope, you can choose to buy organic kale which does not have the high amounts of herbicide/pesticide as conventional kale
Could harm thyroid function
If you consume a lot of kale, especially from juicing, it could cause some harm to the functioning of your thyroid.
Kale contains goitrogens which can prevent healthy thyroid function. Other cruciferous vegetables, like arugula, bok choy, broccoli, brussels sprouts, cabbage, cauliflower, collard greens, mustard greens, turnips, and watercress also fall into this category.
While kale has a dark side, it is still a superfood that is loaded with antioxidants and vitamins such as vitamins A, K, C, B6, calcium, and potassium.
Studies show that the components in kale are beneficial for:
Lowering blood pressure, and
contsin anti-inflammatory, anti-viral, anti-depressant, and anti-cancer effects.
Eating organic kale in moderation will give you the benefits that you need.
